Which VPS should I choose for several client websites?

I’m planning to migrate about 20 small websites to a single VPS. Most are WordPress sites, with a few simple PHP projects.

I’m thinking of going with 8 CPU cores / 16 GB RAM / 200 GB NVMe. It’s important to have backups and the ability to quickly scale up resources.

So far, I’m looking at hostpro.com. How would you set up a server like this: one powerful VPS, or would two with 4 CPU cores and 8 GB each be better? I’m specifically interested in practical experience.
