Which VPS is best suited for OpenCart if the store is going to grow?

I am planning to launch an online store on OpenCart. Traffic will be low at first, but I plan to scale up in the future, with many categories and products. Question: which VPS is better to choose at the start - the minimum and then upgrade, or something more powerful right away? I looked at the options at hostpro.com, but I can't decide what would be best for OpenCart.

    If your website is e-commerce or stores any sensitive customer/employee data at all, you need a good SSL certificate.
    Make sure if they offer it, it covers all of your security bases. If not, a multitude of third-party SSL providers exist for you to turn to.
